How it all Started

Hi, I’m so glad you’re here.

🌿1 One Plate  began during a deeply personal turning point in my life. I was diagnosed as pre-diabetic, and my doctor asked me to start a food journal. Writing down every meal and snack felt exhausting — especially because I’m a true snacker and carb lover at heart! Instead, I began snapping pictures of my meals as a way to track what I was really eating.

Over time, the new habit helped me see my destructive patterns.  So, with the help of a certified nutritionist I started looking for simple food swaps — things like quinoa instead of white rice, or homemade peanut-date-dark chocolate protein balls when I craved sweets.

As I let go of empty-calorie foods like sodas and juices, my body began to change. The scale shifted, but more importantly… I shifted. I felt lighter, stronger, and proud of what I saw in the mirror.

Then came the garden. 🌱

Growing even just a few ingredients gave me a sense of power and peace. Knowing where my food came from — watching it grow from seed to plate — made me feel connected and inspired.

Now I want to help you feel the same.
